Brown Sugar Blondies with Two Frosting Options (Vegan, Gluten-Free)

I’m not the world’s best baker, especially when baking gluten-free and vegan. It’s new to me, and I must say that I’ve had more failures than successes. However, I figured out a recipe for Brown Sugar Blondies that quickly became a new family favorite, last night. When I woke up this morning, a couple extra squares of it were missing! I wanted to share it, and I hope that you enjoy it as much as we did!

When I woke up in the morning, two more were missing

Ingredients for Blondies: 

½ cup (one stick) vegan butter, melted
1 flax egg (1 tbsp ground flax, 1 tbsp corn starch, 3 tbsp water, mixed and rested for 5 mins)
3/4 cup dark brown sugar
1 large banana, mashed
1 tablespoon vanilla
1/2 cup oat flour
3/4 cup Bob’s GF flour mix
¼ teaspoon sea salt

Process for Blondies: 

  1. Preheat oven to 350 and grease an 8×8 pan.
  2. Mix butter, egg, sugar, banana, and vanilla.
  3. Stir in flour and salt.
  4. Pour batter into pan and cook for 23-25 minutes.
  5. Let cool in the pan for at least 15 minutes before removing or adding frosting.

You can eat them just as they are, without any frosting, but there are two frostings that pair with these really nicely: Nut Butter Frosting or Coconut Creme Frosting
Ingredients and Process for Nut Butter Frosting:
Mix together:
¼ cup creamy nut butter of choice (no added sugar)
2 tablespoons coconut oil, melted
Powdered sugar, to taste
Plant-based milk, add to desired consistency

Ingredients and Process for Coconut Creme Frosting:
Mix together:
1 small can of coconut creme
Powdered sugar, to taste
2 tablespoons of coconut oil, melted
Plant-based milk, add to desired consistency

Note: for the Coconut Creme frosting, you may need to refrigerate to harden to desired texture, especially if you add the milk.

Option: Sprinkle with carob powder, carob drops, or other favorite topping.
